When my immediate family gets together we are 19 people total. (That’s 10 adults, 9 kids under 7 years old, and 1 more on the way!) When we are all staying at my parents house it is chaotic to say the least. ?
When we get together I am the self-proclaimed resident chef and everyone who is brave enough to join me in the kitchen will be bossed around no doubt. (I’m the oldest sister, so naturally I tell everyone what to do.) All joking aside, my parents’ 100 year old house is my favorite kitchen to cook in. It may be that my mom is willing to clean up every mess I make, but I think it has to do with all the willing and opinionated family members ready to taste what I create and give me honest feedback.
The last time we were all together I made a handful of tasty meals, snacks and desserts throughout the weekend. But do you know what everyone wanted more of??
“Can you make that bacon and dill dip, again??”
Yup…mayo, bacon, red onion, fresh dill, cheddar cheese…it’s no wonder. This is nothing fancy, and certainly not healthy, and that is probably the appeal. I honestly made two double batches of this in one weekend and we polished it off after all nine of the kids were asleep. Honestly, once you try it, you will crave “that bacon and dill dip”.
This is my version of the popular “Neiman Marcus” dip. I’m sure your family will love it as much as mine.
- ¼ c sliced almonds
- 4 slices bacon, cooked, cooled and crumbled
- 1 c sharp cheddar, shredded
- 2 Tbls red onion, minced
- 1 Tbls fresh dill, minced
- ½ c good mayo
- dash of salt
- ¼ tsp fresh cracked pepper
- Mix all ingredients together in a small bowl and refrigerate at least an hour before serving.
- Serve on top of your favorite crackers with a glass of red wine. 😉
