Name one thing better than homemade pizza:
I would say, homemade pizza featuring homemade Italian sausage. Yes, fresh sage, fennel seeds, cayenne pepper, sweet paprika, salt and pepper all beautifully compliment each other as you can see here .
Homemade Italian sausage is surprisingly easy to make and I love that I can control the heat and spices based on what I’m making it for. Like spicy sausage? Add more cayenne pepper. Want a breakfast sausage? Use less fennel and a tad more sage. I use traditional ground pork but I think this would work well with ground turkey as well.
This is amazing on pizza, in lasagna, with pasta, in soup…you get the idea. Once you start seasoning your own sausage you will be dreaming up new ways to use it.
This is Amy Thielen’s recipe and if you don’t know who Amy Thielen is you should check her out! She is a Minnesota chef and lives in a small town a couple of hours away from me. I LOVE everything she makes including this great recipe:
- 1 lb ground pork
- 1½ tsp fennel seeds
- 1¼ tsp cracked black pepper
- 1 Tbls fresh sage, minced
- 2 tsp sweet paprika
- 1¼ tsp salt
- ⅛ tsp cayenne pepper
- Place pork in a medium bowl. Add remaining ingredients and gently mix together and refrigerate until ready to cook.
