It’s happening. So many mixed emotions here with end of summer in sight and back-to-school just around the bend. This summer has been like one long, three-month vacation. A vacation that includes non-stop housework and meals but you know what I mean. I am mourning the end of late nights, pool days, outside adventures and being able to throw dinner together in minutes with the help of the grill and all the beautiful summer produce.
But then there’s fall. I am such a lover of fall that I can’t help but be excited for school to start. I look forward to crisp mornings, football games, pumpkin spice lattes, and all the adventures Vaida will encounter with 1st grade starting.
So we are embracing back-to-school and my mind is busy thinking of stocking my freezer with our favorite waffles, pancakes and homemade granola. I’ve made my master list of lunch ideas for Vaida and I’m already preparing for after school snacks. I have been busy this week trying multiple granola bar recipes to find the perfect one. Obviously, my kids were totally up for the challenge of sampling various ones. Some were too “healthy” tasting, and some WAY too sweet.
This one, I think, is: just right. Just the right amount of sweet. Just the right amount of chewy. With whole oats, puffed millet, almond butter and flax meal, it’s just the right amount of nutrients that will fill your kiddos up and get them through piano or dance lessons this fall.

- ¼ c almond butter
- ¼ c coconut oil
- ⅓ c honey
- ¼ c brown sugar
- ½ tsp salt
- 1 tsp vanilla
- 1½ c rolled oats
- ⅔ c puffed millet
- ⅔ c crispy rice cereal
- 3 Tbls flax meal seed
- ¼ c mini chocolate chips (or a little less)
- In a small sauce pan combine almond butter, coconut oil, honey, brown sugar and salt. Over medium heat bring contents to a boil (stirring frequently) and boil for 1 minute. Remove from heat and add vanilla. Allow mixture to cool slightly (about 10 minutes) while you prepare remaining ingredients.
- In a medium bowl combine: oats, millet, cereal and flax. Pour almond butter mixture over dry ingredients and stir until well coated. Spread in a parchment lined 8x8 pan and sprinkle chocolate chips over oats. (Note: wait until mixture has cooled a bit before adding chocolate chips or they will melt.) Press down firmly with your hands and refrigerate. When bars have hardened, cut into strips and either wrap individually or store them in a sealed container in the refrigerator.
