It’s happening. So many mixed emotions here with end of summer in sight and back-to-school just around the bend. This summer has been like one long, three-month vacation. A vacation that includes non-stop housework and meals but you know what I mean. I am mourning the end of late nights, pool days, outside adventures and being able to throw dinner together in minutes with the help of the grill and all the beautiful summer produce.
But then there’s fall. I am such a lover of fall that I can’t help but be excited for school to start. I look forward to crisp mornings, football games, pumpkin spice lattes, and all the adventures Vaida will encounter with 1st grade starting.
So we are embracing back-to-school and my mind is busy thinking of stocking my freezer with our favorite waffles, pancakes and homemade granola. I’ve made my master list of lunch ideas for Vaida and I’m already preparing for after school snacks. I have been busy this week trying multiple granola bar recipes to find the perfect one. Obviously, my kids were totally up for the challenge of sampling various ones. Some were too “healthy” tasting, and some WAY too sweet.
This one, I think, is: just right. Just the right amount of sweet. Just the right amount of chewy. With whole oats, puffed millet, almond butter and flax meal, it’s just the right amount of nutrients that will fill your kiddos up and get them through piano or dance lessons this fall.
GIVEAWAY: Funkins Lunch Bags
I am so excited to share with you that I have teamed up with Funkins to do a giveaway for one of my favorite, back-to-school, must-have items. We love Funkins and their fun, kid-friendly, cloth napkins. I sent one with Vaida every day in her lunch box last year.
Funkins also makes adorable and durable lunch bags. I love that they are washable, eco-friendly and store flat (because we can never have enough kitchen space). They expand to fit a surprising amount of stuff which is great too. Right now Funkins has all of their napkins and lunch bags 20% off so now is a great time to gear up for the school year! (FYI: summer sale ends Aug 15th.)
My kids were so excited to get their new lunch bags in the mail that we had to prepare a “packed lunch” that day. ??
