My favorite kitchen accessory is hands down my Vitamix blender. I should say, my favorite appliance because this thing is a work horse! I easily use it 5 days a week making things such as:
- almond milk
- coconut milk
- almond butter
- oat flour
One time I ran out of butter (gasp!!) and was able to whip some up in a matter of minutes. Another time, I had a house full of guests and was making frosting when I realized I had no powdered sugar. Yep, I was able to make my own! 👊 I just found out that I could make my own cornmeal by grinding up popcorn kernels – clearly, I was overjoyed with this information!
So you can imagine my excitement when Vitamix sent me their personal cup adapter to try.*
The adapter includes 2 – 20 oz cups that attach to my Vitamix base for small batch use. I love it for everyday smoothies because my kids can customize their own drinks. No longer do we have to fight over whether we are having a green smoothie or a pink one – we can have both!
I have to say, the best part of having the personal cup adapter is just having extra blending containers on hand. When I’m working in the kitchen I am always juggling a few different recipes. Tonight I was making almond milk but also needed to whip up some bread crumbs for my homemade chicken nuggets. It was great to not have to pause in between to wash dishes. (Speaking of which, these cups are dishwasher safe.) #lifesaver
We will be introducing solid foods to Vincent in a couple of months and these cups will be just the right size for blending up veggies, etc for him.
I have had my new Vitamix cups for a week, and so far I have made ranch dressing, breadcrumbs, multiple smoothies, faux frappuccinos, almond milk and these beauties:
Say hello to the Pink Cow aka homemade strawberry flavored almond milk. 😍
I’ll be the first to admit, the beverages in our household are usually pretty boring. They consist of milk and water. Yes, I will make the occasional lemonade for company or orange juice when Grandma Trish visits 😉 but for the every day, my kids get the choice of milk or water with meals. (I have one child who will choose cows milk every time, and one that will choose water.)
Homemade almond milk is also in the rotation because it appeals to both of my children. Vaida (the milk lover) loves the creamy texture and appearance and Oliver (the water fan) likes that it is water based and more of a mellow flavor compared to cows milk.
This week I realized we were over-stocked with beautiful spring strawberries (a really good problem to have). Both my husband and I had picked them up getting groceries and then my fruit-of-the-month arrived on the door step and added to the strawberry chaos. 🍓 I knew my kids would flip for a fun pink drink.
First I soaked my almonds in water overnight, then I added strawberries and blended for a couple of minutes in my vitamix personal cup. I strained everything through my nut milk bag (a cheese cloth would work too). I placed the filtered pink drink back in the cup and added ice, vanilla and honey and the pink cow was born.
We did some experimenting and tried another method where I made my almond milk first and then blended the almond milk with the whole strawberries, ice, vanilla & honey. You can see the difference:
We liked both versions so I thought I would share both. If you have a texture sensitive child you will want to blend and strain your strawberry seeds. If you want more of a strawberry shake, pink cow, blend the strawberries in with the ice.
- ¾ c almonds (soaked overnight in water, drained and rinsed)
- 1 c strawberries
- 1½ c filtered water
- 1 tsp vanilla
- 1-2 Tbls honey
- 1 c ice
- pinch of salt
- Method 1 - no strawberry pulp/seeds
- In blender (personal cup) place almonds, strawberries & water. Blend for 1-2 minutes. Strain through nut milk bag or cheese cloth. Discard almond meal and strawberry pulp. Place pink almond milk back in blender and add vanilla, honey, ice and salt. Blend again until slushy. Enjoy right away.
- Method 2 - with strawberry pulp/seeds
- In blender place almonds and water and blend for 1-2 minutes. Strain nut milk through nut milk bag or cheese cloth. Discard almond meal or save for another use. Place almond milk back into blender. Add strawberries, vanilla, honey, ice and salt. Blend again until slushy. Enjoy right away.
